Chicken, Spinach, and Tomato Pizza


2 grilled chicken breasts (cut up into bite sized pieces)
1 pkg. spinach (cook it up and have it ready!)
1 tomato (diced up or sliced up – you decide)
cheese (we like an Italian mix, but choose your favorite)
pizza crust (make your own, or buy a pre-made one at the grocery store)
alfredo sauce (see below)

This pizza couldn’t be easier. Make your crust (or unroll your store bought one!) and start by putting a layer of alfredo sauce to cover the whole base. Sprinkle on enough cheese to cover the crust, and then cover the pizza with your cooked spinach, chicken, and tomato. You can put as much of each as you like, and feel free to add other toppings! We like it really cheesy at our house, so at the end we give it an extra sprinkling of cheese at the end before popping it into the oven. Cook it according to the directions for your pizza crust you chose, and enjoy! Try dipping the crust in the extra alfredo sauce! Yum!

Alfredo Sauce:
1 pint of Heavy Cream
1 stick of butter
2 Tbsp. Cream Cheese
1/2 – 3/4 C. Parmesan cheese
1 tsp. Garlic powder

In a saucepan combine butter, heavy cream, and cream cheese. Simmer this until all is melted, and mixed well. Add the Parmesan cheese and Garlic powder. Simmer this for 15 – 20 minutes on low. You may wish to season with a little salt and pepper. Tastes like Olive Garden!
